A speciality of China's Fujian Province, smoky Lapsang Souchong is dried over fires of resin-sweet pinewood, a technique discovered by accident back in the 16th century. After a travelling army decided to spend the night in the tea warehouses, there was only one thing to save the tea from the stench: smoking it over local pinewood. European traders soon developed a taste for the astonishingly aromatic tea christened Lapsang Souchong â€“ and the rest is history.
