These coffee beans are sourced from the panoramic Yunnan region, renowned for its Pu-er teas and home to the Lahu people, who take immense pride in their coffee production. This classic 'honey' processed coffee involves pulping the ripe cherries and drying the beans in the sun with the sticky, sweet mucilage intact, resulting in rich, sweet flavours. Producing the finest 'honey' coffees requires great care, as it is crucial to stimulate the yeast and allow a controlled amount of fermentation while the coffee slowly dries in the sun with its sticky, sweet sugars. A medium roast enhances the caramel and vanilla flavours, and this processing method develops the coffee's sweetness, silky texture, and apricot-like fruitiness in the finish. Type of Coffee: Whole Bean Origin: Yunnan, China Brewing Instructions: Grind beans before use. For best flavour use freshly ground beans. Best for use in cafetieres, filters and percolators. Use approximately 15g of coffee per 250ml of water. (92-94 Celsius). Perfect Pairing: Fortnum's Piccadilly Salted Caramel Biscuits Can be enjoyed with or without milk.
