A little lighter than our dark, treacly Christmas cakes, but no less rich thanks to a feast of rum-soaked currants, sultanas and fragrant citrus peels and an extravagance of toasted continental marzipan – a continental trick to bring out the flavour of roasted almonds and subtle notes of caramel.
